Recipe Of The Week - Poppy Seed Cake

Here's the latest of our weekly recipe articles, published in association with Nicholas Hythe Kitchen Design Studio and Everlasting Cakes.
All recipes will be supplied by local baker, celebrated artist and author of the recipe book 'Everlasting Cakes', Kathy Santiago. After this week, we'll publish a new recipe every Monday and will try to be seasonal where we can.
Poppy Seed Cake
This has to be the easiest-peasiest cake to make: practically all the ingredients are chucked in at the same time, and then bunged into the oven!
- 3 cups self raising flour
- 1½ cups sugar
- 4 eggs
- 1cup orange juice
(I use the lunch box packs or juice two fresh oranges) - 1tsp good vanilla essence
- 4tbs baking powder
- ½ tsp salt
- 250g butter
- 100g poppy seeds
Turn oven onto 180°. Grease and line donut cake tin.
Mix till a smooth batter all the ingredients, except the poppy seeds.
Gently fold in poppy seeds.
Bake for about 45 mins, until crust is brown and knife comes out clean when tested.
When cooled, dust generously with sieved icing sugar.
Delicious, enjoy your poppy seed smile!
