Apple and cinnamon porridge
For when you need a hot hearty breakfast to keep out the cold chill of those January days. I also eat this for supper sometimes, if I've had a hard day and feel in need of something warm and comforting.
Servings: 2
Preparation time: 5 minutes
Cooking time: 20 - 25 minutes
Ingredients
500ml water, (you can use half water and half milk)
70g Medium ground oats
1 Apples, peeled core and chopped
50g Raisins
½ tsp Cinnamon
Method
1. In a non-stick pan bring the water (or water and milk) to the boil. Slowly pour the oats into the boiling liquid, stirring constantly with a wooden spoon.
2. Keep stirring until it has returned to the boil again, add the apple and raisins and reduce the heat, cover the pan and simmer very gently for 15 minutes, stirring frequently.
3. Add the cinnamon at this point and simmer and stir for a further 5- 10 minutes depending on the quality of the oats. The porridge should be thick but pourable consistency.
If at first you find this recipe lacking in sweetness drizzle over a teaspoon of honey to serve, you have probably been used to over sweetened cereal and your body will be looking for an instant sweet hit, if you deny your body this you'll feel hungry all morning and may end up either grumpy or binging.
