Chicken Caeser salad wraps
I love using tortilla wraps, I find them more accommodating than bread you can get the filling of one sandwich in to one wrap and as wraps have approximately only 115 calories per wrap, where as bread is on average 90 calories a slice (2 to make a sandwich 180 calories) are an instant calorie saver.
Serves: 2
Preparation Time: 10 Minutes
Cooking Time: 20 Minutes
Ingredients
2 Tortilla wraps
1 Chicken breast, bone and skin removed
2 Whole peppercorns
1 Bay leaf
1 Romaine Lettuce, washed and trimmed
For the dressing:
1 Small clove garlic, crushed
2 Anchovy fillets in olive oil, finely chopped
3 tbsp 0% fat Greek yogurt
Juice of ½ lemon
15g Parmesan cheese, finely grated
Method
1. Place chicken breast in a small saucepan and cover with water add the bay leaf and peppercorns. Bring to the boil and then reduce to a low simmer for 15 minutes.
2. Remove chicken breast and allow to cool completely.
3. Whisk together all of the dressing ingredients and adjust seasoning to taste with a little black pepper.
4. Slice the chicken quite thinly once cooled and toss together with the lettuce and dressing.
5. Place half of the mixture on each wrap and roll up. Wrap in foil and you're good to go.
