Aioli - Garlic Flavoured Mayonnaise

Aioli
Aioli is a garlic flavoured mayonnaise popular in the south of France and the Mediterranean. Use spread on croutons
Servings: makes 200ml approx
Preparation Time: 10 minutes
Ingredients
2 egg yolks
1 clove garlic, peeled and crushed
1 tbsp Parsley, roughly chopped
1/4 lemon, juice only
75ml Olive oil
75ml Vegetable oil
pinch Salt
pinch Cayenne pepper
Method
1. Place the crushed garlic in a mixing bowl with the egg yolks. Add a teaspoon of hot water and whisk together. Slowly drizzle the oil into the egg yolks until it begins to thicken. Keep whisking, add a pinch of salt and cayenne pepper. Squeeze in the lemon juice.
2. Mix in well adjust seasoning if required. Pour into a serving dish or spread onto crostini as a garnish for soup.
