Castle Donington Farmers' Market - October

The ‘Cookery Demonstration with a Difference' held at the Castle Donington Farmers' Market on Saturday fully lived up to expectations and visitors to the Market happily tasted the resultant beautifully creamy risotto.
Whilst giving her demonstration Rachel Edwards-Stuart explained the science behind the cooking process. She described why it was so important to start with the onion rather than the garlic and why rice for risotto should not be pre-rinsed.
Rachel, who has taught at Chef schools in France and is being sponsored in her PhD studies by the Michelin starred Fat Duck Restaurant owned by TV celebrity Heston Blumenthal, went round the Farmers' Market stalls selecting the other ingredients to add to the arborio rice. This variety, she explained, releases starch more readily. By adding the stock gradually and stirring all the time the finished dish won much acclaim.
Rachel told her audience that many variations on the basic risotto recipe can be made by adding fish, meat or vegetables such as butternut squash.
The organisers of the Farmers' Market are very much hoping Rachel will be willing to visit the market again for a further demonstration in the New Year.
The next Farmers' Market will be held on Saturday 10 November at St. Edward's School from 9.00am until 12.30pm when once again the Community bus will be on hand to ferry shoppers to the market simply by booking a seat.
