Fudge

 

This is a lovely recipe for fudge, for when you want to treat your kids. The recipe is so simple your kids can help with making it.

Ingredients:

 

3 cups of milk chocolate chips
1 can of condensed milk
1/4 cup of butter
1 tsp vanilla extract
Chopped nuts such as walnut, peanut or pecan and/or mini marshmallows (optional)

 

  • Ø Take a large bowl (suitable for microwave cooking) and put in the chocolate chips, condensed milk, butter and vanilla extract.
  • Ø Cook in the microwave until the chocolate chips have melted (approximately 3 minutes in a 850W microwave). Stop and stir every 30 seconds.
  • Ø If you want to add chopped nuts or marshmallows do it now!
  • Ø Grease a 8x8 inch dish and pour in the mixture. Put in the fridge for at least 2 hours to allow it to set.

 

 

Chocolate Krispie Cakes


A simple recipe for this children's favourite treat:

Ingredients:

 

3 oz Chocolate (plain, dark or milk)
3 oz Syrup
3 oz Butter
3 oz Rice Krispies or cornflakes
Chocolate chips or smarties (optional)

 

  • Ø Put a oven proof bowl in a pan of water and bring to the boil. Break up the chocolate and put it into the bowl. Stir the chocolate until it has melted
  • Ø Melt the butter and syrup together in a pan. Keep the heat low to medium to avoid burning.
  • Ø Mix this mixture into the chocolate and then stir in the Rice Krispies or cornflakes with a tablespoon. Add in chocolate chips or smarties if desired.
  • Ø Spoon into paper cases (as you would do for making cupcakes). If you have no paper cases, you can place spoonfuls of the mixture onto grease proof paper.
  • Ø Leave the krispie cakes in the refrigerator to cool.

 

Banana Milkshake Recipe


This recipe will make two to three glasses of delicious (and healthy) banana milkshake.

 

Ingredients:


2 Ripe bananas
1/2 Pint of milk
Ground nutmeg

 

  • Ø Break the banana into pieces and put in a blender. Blend.
  • Ø Pour in the milk and a pinch of ground nutmeg. Blend until the mixture is smooth. Serve cold.

 

 

Cupcakes

 

 

 

Ingredients:

 

2 Eggs
4oz Butter or margarine
4oz Self raising flour
4oz sugar
Dash of orange or pineapple juice (optional)

 

  • Ø Beat the sugar into the butter/margarine
  • Ø Mix in the flour and add the eggs
  • Ø Pour in a little pineapple or orange juice, if desired.
  • Ø Put in the oven and bake at 180C for 20 minutes.

 

Kids can have fun decorating the cakes with smiley faces by spreading icing over the top of the cakes and making the faces from silver balls or chocolate chips.

To make butterfly cakes, slice the top off the cake and spread with butter icing and a dollop of jam. Then cut the top in half and stick the two halves into the butter icing.

  

  

Pizza

 

Ingredients:

To make the base:

350g Plain flour
1 Sachet of dried yeast
210ml of warm water
Olive Oil

To make the sauce:

425g Chopped tomatoes
Olive Oil
Cooked onion, finely chopped
Herbs

 

 

 

  • Ø Sieve the flour into a bowl and stir in the dried yeast.
  • Ø Pour in 210ml of warm water and add 1 and half tablespoons of olive oil.
  • Ø Mix well to the dough forms a ball.
  • Ø Sprinkle a little flour over the work surface and knead dough for about 10 minutes, until the mixture is smooth.
  • Ø Put the dough in a bowl and cover with cling film. Leave somewhere warm for an hour, until the yeast has doubled in size.
  • Ø While the dough is rising, prepare the sauce. Combine all the above ingredients in a bowl and stir. If preferred, use a blender to mix the ingredients to a smooth consistency.
  • Ø Once the dough has risen, re-knead it for 2-3 minutes.
  • Ø Split the dough in half and roll out into two pizzas.
  • Ø Spread the sauce over the two bases. Add cheese and any other toppings.
  • Ø Bake for around 30 minutes at 180C.

 

Fruit Kebabs

 

 


This easy recipe is healthy and fun for children. The ingredients can be varied according to what fruits are in season or the preference of the child. Four suggested combinations of fruit are given below.

Option 1
1 bunch of seedless red grapes
1 bunch of seedless white grapes
satsumas
honeydew melon

Option 2
honeydew melon
watermelon
strawberries
lychees

Option 3
strawberries
bananas
honeydew melon
1 bunch white seedless grapes

Option 4
pineapple chunks
cheese
lychees
1 bunch white grapes

  • Ø Peel the Satsuma, de-stalk the grapes and cut the melon and cheese into cubes (if applicable)
  • Ø Thread the ingredients onto cocktail sticks
  • Ø Serve! Try using Greek yoghurt as a dip.
