LEMON CAKE

4 oz margarine
2 eggs
4 tablespoons milk
6 ozs caster sugar
6ozs s.r. flour
zest of 2 lemons (save the juice for later)
Mix all the above ingredients well. Pour into a loaf tin which has sbeen lined with greaseproof paper.
Bake for spproximately 45 minutes in a preheated oven. Electric 180 or Gas mark 5
Juice of two lemons
3 ozs icing sugar
When the cake is cooked - allow to cool slightly and turn out.
Pierce cake all over and drizzel over the lemon juice
Allow the cake to cool completely and dust the top of the cake with the icing sugar.
