COOL AVOCADO SOUP

'Cool Avocado Soup'
start to finish 2 1/4 hours (2 hours chilling)
2 mediums avocados, halved, pitted, peeled & cut up.
1/2 of a small onion, cut up.
14 ounces of chicken broth (organic preferably)
1/2 cup light or fat free dairy sour cream (if you can get the alternative soya sour cream it is just as good, if not better)
1 cup of reduced-fat milk (soya milk is just as good and better for you)
A dash of paprika
Salt
Ground black pepper.
In a blender or food processor combine all the above ingredients. Blend or process until the avocado mixture is smooth and creamy.
Transfer to a glass bowl. Cover and chill for at least 2 hours.
Season to taste. If necessary stir in additional milk to reach the desired consistency (as it is very nice!). Ladle into chilled bowls. Makes 4 side-dish servings.
