RICE FRUIT CAKE

12 ozs Dried fruit, mainly Lexia raisins, with a few prunes, figs and glace cherries.
8 ozs Rice flour
5 fluid ozs water
4 ozs butter
1 egg (Optional)
1/2 ozs fructose
1 desertspoon ground or chopped hazelnuts
1/2 desertspoon blackstrap molasses
Large teaspoon Xantham gum
1 teaspoon ginger
Big pinch mixed spice
Pinch of bi-carbonate of soda
Pinch of baking powder (optional)
Dash of brandy (optional)
Method
1) Place the dried fruit, fructose, molasses, butter, water and brandy in a pan and boil for 15 minutes. Then allow to cool.
2) Mix the remaining dry ingredients together
3) Whisk the egg (if using)
4) Place the dry ingredients and whisked egg into the saucepan with the dried fruit and mix thoroughly.
5) Place in a deep 8 inch sandwich tin, lined with greaseproof paper.
6) Place in the middle of a pre-heated oven Gas mark 4 or 180C electric or 350~F for one hour.
