Elderflower cordial
That familiar old favourite, wonderful served with Sparking water at a barbeque for the non-drinkers or drivers. The Elderflowers should be young and fragrant, if you smell them and they have that overpowering kitty litter scent then they're past their best and will not make a good cordial.

- Preparation Time: 30 minutes
- Standing time Time: Overnight

2 litres boiling water
900g caster sugar
2 Lemons, sliced
75g citric or tartaric acid (available from the chemist)

2. Slice the lemons and oranges and add together with the citric or tartaric acid.
3. Next remove the elderflowers from the stalks and add to the mixture. Leave covered in a cool dark place overnight, stirring occasionally.
