Soya bean and Shiitake Stir fry.

Ingredients
200g shiitake mushrooms
2 tbs Sake (or Dry Sherry)
2 tbsp Vegetable oil
2 garlic cloves, finely chopped
2 red chillies, finely chopped
3 tbsp Green soya beans, (Edamame)
200ml Vegetable stock
2 tbsp soy sauce
1/2 tbsp cornflour, mixed with 1 tbsp cold water
1 tbsp Sesame Oil
2 Spring onions, sliced diagonally
Method
1. Soak the sliced shitake mushrooms in the sake, and a good pinch of salt for 15 minutes.
2. Put the Vegetable oil in a wok. Cook the garlic, chillies, drained shiitake mushrooms, and soya beans until softened. Add the vegetable stock, tofu, soy sauce and a pinch of salt.
3. Reduce the heat, add the cornflour paste and cook for 1-2 minutes. Add the sesame oil and put onto a serving plate. Sprinkle with spring onions to garnish.
If you are allergic to Cornflour, leave it out it only thickens the sauce and gives it a silky texture.
