The onions will keep for up to 1 year unopened, but the longer they are kept the more the vinegar flavour will mature and the less crisp the onions.

As with the Christmas cake if you want to leave out the booze use 50ml Earl Grey tea and 50ml of Orange juice in place of the Rum and Cointreau.
