Sparkling Pimms and Raspberry Jellies

pimms & raspberry jellies

  Nothing says summer more loudly or more clearly than Pimms. These fantastic little jellies are perfect for a garden party and they can easily be made up the night before.

Preparation time: 20 minutes, plus setting time
Cooking time: 5 minutes
Serves: 6

Ingredients
100ml Pimms
450ml Lemonade
150g Raspberries
6 slices Cucumber
6 Mint leaves
6 slices of Orange
2 leaves of Gelatine
6 Glasses to serve in

Method
1.Soak the gelatine leaves in a little cold water. Gently heat half of the lemonade, remove from heat and dissolve in the soaked gelatine leaves.
2. Add the rest of the lemonade and Pimms, stir well.
3. Divide the raspberries among the glasses. Place a slice of cucumber, mint leaf and orange slice in each glass. Pour over the jelly mixture.
4. Refrigerate for at least 3 hours or even better, overnight.
