Middle Eastern inspired Baked Figs

Cooking time: 3 - 4 minutes
Ingredients
4 Figs
25g Unsalted butter
½ tsp Ground Cinnamon
½ tsp Vanilla sugar
1 tsp Rose water
Small tub Natural strained Greek yogurt
50g Pistachio nuts, crushed
Method
1. Preheat your oven to 200oC/Gas 6, or preheat your grill as hot as it will go.
2. Cut a cross in the figs ¾ of the way down and squeeze the side gently so that the fig opens out, arrange in a small heat proof dish.
3. Melt the butter in a small saucepan; add the cinnamon, rose water and sugar. Stir until the sugar has dissolved.
4. Pour the syrup over the figs and bake for 3 - 4 minutes depending on how ripe your figs are. Or Heat under the grill, if you can't bear to put the oven on for 4 figs.
5. Serve with a huge dollop of yogurt and a scattering of pistachios.
