Broccoli Cakes

Ideal for leftovers, any vegetables can be substituted into the potato and cheese base. These are a great way to get vegetables into kids, or you can make mini burgers as a vegetarian starter served with a sweet chilli dipping sauce.

Makes: 8 little cakes
Preparation Time: 25 minutes
Cooking Time: 20 Minutes
Ingredients
250g Mashed potato
50g grated cheddar cheese
100g Cooked broccoli florettes
1 Beaten egg
100g Fresh bread crumbs
1 tbsp freshly grated parmesan cheese
Method
1. Preheat the oven to 180oC.
2. Mix together the mashed potato, grated cheese and broccoli. My daughter loves to do this with her hands, but you can use a spoon if you like.
3. Make into small burgers and allow to chill for 20-30 minutes
4. Dip burgers into the beaten egg and then into the bread crumbs and parmesan mixture.
5. Place onto a lightly greased try, these can be shallow fried but I prefer oven baking.
6. Oven bake for 15-18 minutes.
I like to make these into hamburgers, place the burger, salad and tomato ketchup into a small wholemeal roll.
