Toasted Goat's Cheese wth Caramelised Onions

A great lunch for two or starter for four, this dish contrasts the creamy sharpness of the goat's cheese with the melting sweetness of the onions.

Serves: 2
Ingredients
1 large Onion, peeled and finely sliced
½ tsp Fresh thyme leaves
1 tbsp olive oil
25g butter
1 tbsp balsamic vinegar
2 tsp sugar
100g goat's cheese
4 Slices of toasted Ciabatta or sourdough bread
Method
1. Heat the oil and the butter in a medium pan, add the onion and thyme. Stir well and cover. Cook on a low heat for 30 minutes, stirring regularly to make sure they don't burn.
2. Add the sugar and vinegar, stir well. Cover and cook for a further 15 minutes, until the onions are golden brown, very soft and beginning to caramelise.
3. Cut the cheese into 4 slices. Pre-heat the grill to a medium temperature.
4. Put ¼ of the onion mixture on each slice of toast and spread out to cover evenly. Top with a slice of goats cheese and grill for 5 minutes, until the top of the cheese is just starting to brown.
