Cauliflower and Tomato Bake

A quick & easy weekday supper; help your family get their five a day. Try this healthy alternative to cauliflower cheese.

Serves: 4
Preparation time: 15 minutes
Cooking time: 30 minutes
Ingredients
1 Small cauliflower, washed and broken into florettes
1 Red pepper, roughly chopped
1 Onion, peeled and chopped
1 Can chopped tomatoes
2 Cloves garlic, peeled and crushed
10 Black olives
Sprig of thyme
1 Red chilli, deseeded and finely chopped
2 Tbsp Olive oil
100g Bread crumbs
50g Parmesan cheese.
Method
1. Par boil the cauliflower florettes in slightly salted water for about 5 minutes and set aside. Pre-heat oven to 180oC.
2. In a large saucepan gently heat the olive oil with the garlic, thyme and chilli. When the garlic is a light golden colour add the chopped pepper and onion gently fry until softened.
3. Add tomatoes, olives and cauliflower and stir. Place mixture in an oven proof dish, cover with bread crumbs and parmesan, bake for 20 minutes.
This can either be served as a main dish with some crusty bread or as a great accompaniment to fish or chicken.
