Beef Salad with Pink Grapefruit and Watercress

Fresh and zingy yet substantial; a perfect Spring salad. I like my beef really underdone but if you don't then just cook the beef steak for a few minutes longer.

Serves: 2
Preparation Time: 15 minutes
Ingredients
150g Sirloin steak
1 Small bunch watercress
½ Pink grapefruit, segmented
4 Cherry tomatoes, halved
For the dressing:
1 tsp Red chillies, chopped
1 tsp Sesame Oil
1 tsp Soy Sauce
1 small Garlic clove, crushed
1 tsp Freshly grated horseradish
1 tsp Sesame seeds
pinch Sea salt
pinch Freshly ground black pepper
Method
1. Heat a griddle pan over a medium high heat, when the pan is searingly hot cook the steak for 1-2 minutes on each side, set aside to rest.
2. Tip the watercress, grapefruit and cherry tomatoes into a large bowl and leave on one side. Combine all the ingredients for dressing in a small bowl and whisk well until all of the ingredients are combined, taste for seasoning adjust with salt and pepper.
3. Slice the rested beef thinly at a diagonal. Stir any juices that escape from the beef into the dressing.
4. Arrange the sliced beef on a big plate and top with the fruit and watercress. Just before serving, spoon over the dressing.
