Steamed Sea Bass with Black Beans

This is the most deliciously easy dish, it is so light and virtually fat-free. Easy enough to prepare after work and serve with rice or a simple vegetable stir fry. This dish can be done with any white fish which is in season. Fermented, salted black beans are available online or at most Chinese supermarkets.

Preparation Time: 5 minutes
Cooking Time: 12 minutes
Ingredients
1 medium sized Sea bass fillets
2 cloves Garlic, peeled and crushed
½ inch piece Fresh ginger, grated
3 tbsp Sesame oil
3 tbsp Soy sauce
2 tbsp Rice wine
3 tbsp Lime juice
2 tbsp Fermented salted Black beans
2 Spring onions, chopped diagonally
1 Green chilli, deseeded and sliced diagonally
Freshly ground pepper
Method
1. Put the Garlic, ginger, sesame oil, soy sauce, rice wine, lime juice, pinch of pepper, half of the spring onion and chilli in a large pestle and mortar. Thoroughly rinse the black beans and put them in the mortar, gently mix together the ingredients breaking up the black beans but not pounding them.
2. Make slits in the skin side of the fish and place skin side down on lightly oiled foil in a steamer over a pan of simmering water. Spoon the Black bean mixture over the fish fillets.
3. Cover and steam for 10-12 minutes until the fish is cooked through. Sprinkle with the remaining sliced spring onion and serve with jasmine rice of a simple vegetable sir fry.
