Minted Pea and Broad Bean Dip

This has to be one of the easiest dips ever.  Packed full of flavour, it sings of summer. It would also work as a great accompaniment to spring lamb. I used 0% fat Greek yogurt making it really low in calories, perfect for attaining or maintaining that summer body.

Serves: 4
Preparation time: 5 minutes
Cooking time: 5-6 minutes

Ingredients
500 g fresh Broad beans
500g Peas, fresh or frozen
3 tbsp Natural yoghurt
1 clove Garlic, peeled
Juice 1 lemon
small bunch of Mint, finely chopped
6 Pitta breads

Method
1. Cook the shelled peas and beans in boiling water for 5-6 minutes until just tender. Drain and refresh under cold water.
2. Put all of the ingredients in a blender and blitz until smooth. Check seasoning and adjust if necessary.
3. Serve with the toasted pitta bread.
