Recipe: Tarte au Tatin

A favourite dessert, this is a simple twist on a classic apple pie and is just as good cold the next day. The addition of rosemary-infused caster sugar lends a gentle herbal flavour, but it is not essential.
Serves: 6 to 8
Preparation time: 20 minutes
Cooking time: 35 to 40 minutes
Ingredients:
- 4 apples, peeled and cored
- 25g butter
- 50g rosemary-infused caster sugar
- 1 pack ready rolled puff pastry
Method:
- Pre heat oven to 180oC/ gas 4. Roll out your puff pastry on a well floured surface to roughly the size of your pan.
- Cut each apple into 8ths, in a large heavy based frying pan which is oven proof heat the butter gently and arrange the apple slices in the pan.
- Turn the apple slices after 2 minutes and sprinkle the sugar over evenly. Place the rolled out puff pastry over the top, tucking in any excess.
- Place in the oven for 30 to 35 minutes until golden brown.
- Carefully turn out on to a serving plate. Serve hot or cold with cream.
