Recipe: Middle Eastern-Inspired Baked Figs

A fantastically easy yet sumptuous dish to evoke memories of Greek holidays. The figs are sweet and scented and the yogurt is cold and sharp - a perfect combination of flavour and textures.
Serves: 2
Preparation time: 10 minutes
Cooking time: 3-4 minutes
Ingredients:
4 figs- 25g unsalted butter
- ½ tsp ground cinnamon
- ½ tsp vanilla sugar
- 1 tsp rose water
- Small tub natural strained Greek yogurt
- 50g pistachio nuts, crushed
Method:
- Preheat your oven to 200oC/Gas 6, or preheat your grill as hot as it will go.
- Cut a cross in the figs ¾ of the way down and squeeze the side gently so that the fig opens out. Arrange in a small heatproof dish.
- Melt the butter in a small saucepan; add the cinnamon, rose water and sugar. Stir until the sugar has dissolved.
- Pour the syrup over the figs and bake for 3-4 minutes depending on how ripe your figs are. Or heat under the grill if you can't bear to put the oven on for just four figs.
- Serve with a huge dollop of yogurt and a scattering of pistachios.
