Chicken Chasseur (serves 4)
Ingredients
8 rashers of bacon, chopped
4 Boneless chicken breasts, cut into pieces
400g tin of chopped tomatoes
200g of baby mushrooms
1 tablespoon of plain flour
1 stock cube
tablespoon of Worcestershire sauce
two tablespoons of fresh parsley chopped
Heat a large frying pan and dry fry the bacon till it starts to brown, around 2 mins. Add the chicken then fry gently for 3-4 minutes till the chicken changes colour.Add the mushrooms and turn up the heat, cook for a 2-3 minutes then stir in the flour, cook until it forms a paste. Add the tomatoes, stir, then crumble in the stock cube. Simmer gently for 10 minutes then add the Worcestershire sauce, stir in the parsley. Service with rice or mashed potatoes.
