Wrapped Parma Ham Chicken in Red Wine sauce
Ingredients; 3 Chicken fillets Parma Ham 100g Garlic & Herb Cheese spread 300ml Red Wine 300ml Water 2 x Chicken oxo 1-tablespoon light brown sugar Method; Picture 1 (preparation)
Preparation Make a horizontal slit along the length of each fillet to form a pocket Spread the soften cheese spread inside the pocket of the fillet Wrap Parma Ham around the chicken & tie with string to keep ham in place (as shown pic 1) start cooking Picture 2
Put oxo cubes in a jug, add boiling water 300ml Add 300ml red wine, transfer to frying pan Bring to boil in a large frying pan then add brown sugar to dissolve Turn down to medium heat Gently put the fillets into the frying pan with lid on and leave to simmer until the chicken tender. When chicken is cooked, keep aside and keep warm. Reheat the sauce and boil to reduced and thickened. Add corn flour if required. Add vegetables of your choice and enjoy! |
