BANISH BURNS ON PANCAKE DAY (05/02/08) With Antony Worrall Thompson

Pancake Day is a great opportunity to have family fun flipping pancakes and creative time making fillings and toppings. But take care to avoid hazards such as burned fingers from touching the pan and burns to the hands and forearms from poorly flipped pancakes. When figures were last compiled by the government they indicated cooking pancakes could send around 250 people to hospital, with the vast majority being children suffering burns from hot frying pans while trying their hand in the kitchen and mostly while tossing a pancake.

For Perfect Batter, Antony suggests...
Sift 175g of flour into a bowl and add a pinch of salt and 2tsp of caster sugar. Add two large free range eggs and one egg yolk and beat to combine. Mix 150ml of milk and 150ml of water and add this slowly, stirring until the batter is covered in bubbles. Allow it to stand in a cold place for one hour. This will make six large pancakes.

Try a new topping
Why not let the lemons and maple syrup have a rest this year and try this recipe instead from Antony's new book, Real Family Food (Published by Mitchell Beazley priced £16.99 from all good book shops.)

  • Banana & Chocolate Fudge Sauce - Mix together 115g of cream cheese, 150g Greek yoghurt and 2 tbsp of runny honey. Set aside. Beat 115g unsalted butter with 115g of light muscovado sugar and 25g of cocoa powder. Place in a saucepan with 4 tbsp of golden syrup and 150ml of single cream. Over a medium heat, stir until it simmers and the sauce comes together. Once the pancakes are cooked, spread over the yoghurt filling, add chopped banana slices and roll up the pancake. Then drizzle over the chocolate fudge sauce!

o The largest pancake made and flipped in Rochdale in 1994 - it was 15m in diameter, weighed 3 tonnes and packed an estimated 2 million calories!

o Cool the skin using cool or tepid water for between 10-30 minutes, ideally within 20 minutes of the injury happening. This will prevent the burn getting worse.
o If the burn is on a large area or particularly painful seek professional medical advice. If possible cover the burn with a clean, clear plastic bag until you see a professional as this will help prevent any infection. This is particularly suitable for burns on your hand.
o Don't interfere with the burn or attempt to break the blister when it forms.
