Bean, Pea and Rice Salad with Orange Herb Dressing

Ingredients
250g basmati or long grain rice
500g mixed peas, beans and sweetcorn
2 Oranges
4 tblsps fresh parsley and mint
1 tblsps fresh chives
Parmesan, grated or shavings
Method
1. Pre- cook rice as instructed on the packet
2. Drain well and allow to cool
3. If using frozen peas and beans place in boiling water for required length of time to cook (2-5 mins) then refresh in cold water.
4. Peel and segment one orange & zest and juice the other
5. Chop herbs
6. Mix all ingredients except parmesan together and chill till required
7. Add parmesan just before serving.
