Salmon Pepper Kebabs

Serves: 8
Prep: 10 mins plus marinade time
Cook: 10-15 mins
Ingredients
Marinade:
2 tblsps honey
1 small red chilli, deseeded and chopped
2 tblsps white wine vinegar
Zest & juice 1 lime
1 tblsp light soy sauce
Kebabs:
450g salmon fillets
1 red pepper
1 yellow pepper
1 lime (optional) to serve
Skewers
Method
1. Mix together all the marinade ingredients
2. Cut salmon into chunks
3. Mix salmon into marinade and leave up to 24hrs in fridge minimum ½ hr
4. Cut peppers into chunks
5. Thread salmon onto skewers alternately with peppers.
6. Barbeque or grill turning after 5 minutes & baste with marinade
7. Add lime juice to taste if liked
