Balsamic Roast Beef with a Herb Crust

Serves: 6
Prep: 30 mins plus marinating up to 24hrs
Cook: depends on weight of meat and how well cooked you like it
Ingredients
120ml olive oil
80ml balsamic vinegar
1 large bunch thyme, stalks removed
3 cloves garlic, chopped
Sea Salt
Black pepper
1.5kg piece of beef for roasting (such as silverside or use fillet for something extra special!)
1 large bunch flatleaf parsley, finely chopped
5 tblsps finely chopped mixed herbs such as tarragon, thyme and oregano
To Serve;
Roasted baby potatoes
Mayonnaise
Method
1. Combine olive oil, vinegar, thyme and garlic in a bowl and season with salt and pepper
2. Place beef in marinade and turn to coat, then refrigerate 2 - 24hrs
3. Remove from fridge 1 hr before cooking and place on a lightly oiled oven tray and roast for required time.
4. Remove and cool
5. Place a large sheet clingfilm on work surface and scatter with half remaining herbs
6. Place beef on top then scatter with remaining herbs
7. Wrap tightly in cling film and refrigerate minimum 2 hrs
8. Unwrap and slice.
