Move over turkey. According to the latest sales figures released by Waitrose, customers will be going quackers for duck and goose this Christmas.


With just under 6 weeks still to go until the big day, Christmas orders for duck are already up 71% year on year, and goose by 35% - far outstripping the growth of traditional festive fare such as turkey.

The supermarket is attributing the rise in demand to a growing number of shoppers looking for an alternative centrepiece for their festive dinner.

Says Frances Westerman, Poultry Buyer at Waitrose: “Customers are increasingly looking for a new taste experience and foods that pack more punch in terms of flavour. With their sweet, rich meat, duck and goose make a sumptuous change to Christmas staples such as turkey and chicken.

“Duck and goose have a natural marbling of fat, which helps keep the bird moist during roasting. Canny cooks can also use the leftover fat to crisp up their roasties ‘a la Nigella’. Whilst for many, Christmas isn’t Christmas without a turkey; the figures suggest that duck and goose are fast becoming this season’s must-have.”

Not sure I qualify to comment as my ancestors left Towcester in 1635 and I live in New York State, but I am thinking of Dickens and the Christmas goose, which for me has always been the image of a Victorian English Christmas. So I am always surprised and curious about the popularity of turkey, as that is a colonial American game bird. Of course we have turkey on Thanksgiving, which is coming up next week, and often at Christmas also. And while on the subject of transAtlantic diffusion, how did baked beans ( a colonial American staple) become the popular "beans and toast" I keep seeing in British comedies over here?
