Stir-fried Broccoli and Mushroom

Cut the broccoli into small florets and slice the stems. Finely slice the mushrooms and cut the carrots into matchsticks.
Chop the spring onions, crush the garlic and stir-fry in hot oil for 2 minutes. Add the broccoli and carrots and stir-fry for a further 2 minutes.
Stir in the mushrooms and fry for a further 2 minutes.
Add the soy sauce and sherry then cook for 2 minutes. Stir in the sesame oil and season with pepper.
Remove from the heat and serve with rice or noodles.
