Greek Beans
This is a personal favourite, tasty and quick to prepare.
2 large onions
Fresh Mint - a bunch (dired if non available, a good few teaspoons)
2 tins butter breans
2 tins Tomatoes
½ pint good olive oil
I know it seems like a lot of oil, but its key to the recipe, so choose a good one, chop the onions and fry slowly until they are very soft, dont let them burn, but give enough time, probably about 20 minutes. Add the beans, tomatoes, mint, salt and pepper - season to taste - cook for a further 30 mins on a low heat.
Serve with brown rice and a crisp green salad or with fresh wholemela rolls.
