Whole Wheat Pasta With Cauliflower, Walnuts & Feta

Ingredients
1 head cauliflower
1 medium onion
4 cloves garlic
250g whole wheat pasta
olive oil
salt & pepper
1 pinch dried chilli
white wine vinegar
1/2 lemon
50g toasted walnuts
50g feta cheese
parmesan, grated
parsley, chopped
Instructions
This recipe comes from the Alice Waters book Chez Panisse Vegetables.
Put a large pot of water on to boil. Cut the cauliflower into small florets. Peel the onion and slice it very thin. Peel and finely chop the garlic. Put the pasta on to cook. Next sauté the cauliflower in olive oil in a large sauté pan and when it begins to soften, season with salt and pepper and add the sliced onion and a pinch of dried chilli. Sauté over medium to high heat until the vegetables are brown and tender. Add the garlic and remove from the heat, tossing so the garlic does not burn. Add a splash of wine vinegar, the juice of 1/2 lemon and the toasted walnuts. Taste and adjust the seasoning. When the pasta is done, drain and add to the cauliflower, adding enough olive oil to coat the pasta thoroughly, toss together. Sprinkle with grated parmesan and chopped parsley.
