Root Veg Hot Pot

Serves: 4
Ingredients
3 tbsp olive oil
2 tsp cumin and coriander seeds
1 clove garlic
1 onion
1 litre vegetable stock
2 tsp clear honey
300g carrots
400g parsnips
300g Jerusalem artichokes
half a small swede
300g potatoes
half a green cabbage
Instructions
- Peel and chop the carrots, parsnips, potatoes, swede and Jerusalem artichokes into chunks. Finely chop the onion and garlic and roughly slice the cabbage.
- Heat the oil in a pan and fry the coriander and cumin seeds, garlic and onion until soft. Add the stock, honey and root vegetables and simmer for about 20 mins until tender.
- Stir in the cabbage and simmer for 5 mins. Serve with dumplings.
A very simple and quick way to use up the root vegetables in your box. Try adding swede and celeriac, too.
