Spanish Crispy Cauliflower

Ingredients
½ cauliflower, broken into florets
sunflower oil for deep frying
2 tbsp gram flour or rice flour
1 tsp paprika
1 dsp good red wine vinegar
1 tbsp capers (soaked in water for 30 mins)
chopped parsley
salt and pepper
Instructions
- Blanch the cauliflower florets in lightly salted boiling water for a few minutes, until just cooked. Drain well.
- Put the hot cauliflower in a bowl with the flour, paprika, salt and pepper and mix well so the cauliflower is well coated.
- Heat the sunflower oil in a deep fat fryer or other suitable pan. Deep fry the cauliflower in the oil for a few minutes until golden, then remove from the pan.
- Sprinkle the cauliflower with the vinegar, chopped capers and parsley, then serve.
