Broccoli and Blue Cheese Quiche

Cooking Time: 45 minutes
Serves: 6
Ingredients
for the filling:
500g broccoli, cut into florets and steamed
125g blue cheese
150ml milk
3 eggs
for the shortcrust pastry:
175g plain flour
75g margarine, cut into cubes
2 tbsp cold water
pinch of salt
Instructions
- Sift the flour and salt into a bowl and rub in the margarine until the mixture resembles fine breadcrumbs. Add the water and mix until the dough becomes firm. Wrap the dough in cling film and chill for 30 minutes
- Roll out the pastry on a floured surface and line a 20cm flan dish. Prick the surface with a fork and bake bind at 200°C for 15 minutes.
- Arrange the broccoli in the pastry case and crumble the blue cheese on top. Beat the eggs and milk together and pour over the broccoli.
- Bake at 200°C for 35 minutes until golden on top.
