Kohl Rabi and Peanut Salad

Ingredients
1 kohl rabi
2 carrots
1 apple
juice of 1 lemon
100g peanuts
3 tbsp mustard seeds
3 tbsp olive oil
Instructions
Kohl rabi is a bit like a turnip but much milder and crisp, with a delicate nutty flavour. It can be grated raw in salads or simply steamed.
- Peel and grate the kohl rabi, carrots and apple.
- Mix the grated vegetables and apple with the lemon juice, then add the peanuts.
- Heat the olive oil in a heavy based pan, add the mustard seeds and fry until they begin to pop.
- Pour the mustard seeds and olive oil over the salad and mix well.
