Stir fried Shiitake mushrooms with Soya beans

The carnivores amongst you will find Shiitake a robust meaty mushroom and fully satisfying. This is one of my favourite dishes, eating it also makes me feel healthy, Japanese food is both light and flavourful, it is only since the introduction of the ‘western diet' into Japanese culture both heart disease and obesity have rocketed.
Preparation Time: 25 minutes
Cooking Time: 20 minutes
300g shiitake mushrooms
2 tbsp Sake (or Dry Sherry)
2 tbsp Vegetable oil
2 garlic cloves, finely chopped
2 red chillies, chopped finely
5 tbsp Green soya beans, (Edamame)
300ml Vegetable stock
2 tbsp soy sauce
1/2 tbsp cornflour, mixed with 1 tbsp cold water
1 tbsp Sesame Oil
2 Spring onions, sliced diagonally
1. Soak the sliced ****ake mushrooms in the sake, and a good pinch of salt for 15 minutes.
2. Put the Vegetable oil in a wok. Cook the garlic, chillies, drained shiitake mushrooms, and soya beans until softened. Add the vegetable stock, tofu, soy sauce and a pinch of salt.
3. Reduce the heat, add the cornflour paste and cook for 1-2 minutes. Add the sesame oil and put onto a serving plate.
Sprinkle with spring onions to garnish.
Serve with plain Noodles, soba (buckwheat) noodles are particularly good.
