6 Cup Pudding

The six (large) cups are:-
- Self raising flour
- Suet
- Brown sugar
- Mixed fruit ( I actually prefer just sultanas!)
- Breadcrumbs
- Guiness/Beer or Milk/Water
Just mix all the above ingredients together in a large mixing bowl and add a heaped teaspoon of mixed spice. Pop the whole lot into a smaller ceramic mixing bowl and cover the bowl with silver paper (tie a bit of string around the top to hold the paper in place).
Put the bowl inside a large sauspan, with sufficient water to take it up towards the top, place a lid over and cook for at least 6 hours (you can't over cook it, but you could under cook it!).
Remove silver foil and check with skewer that it is cooked right through (skewer should come out clean). Place a plate on top of the bowl an invert. The pudding should look a beautiful dark Christmas pudding colour and shape.
Serve immediately with lashings of brandy butter.
If you only eat half of it, re-heat the remainder by steaming for another 2 hrs beforehand
