Chilli Con Carne

Ingredients
- 250g lean minced steak
- 2 tsp (10 ml) of Extra Virgin Olive Oil
- One onion
- One red pepper
- 6 - 8 closed cup mushrooms
- 2 - 3 fresh chillies (medium strength)
- Large tin of chopped plum tomatoes
- 2 cloves of garlic (crushed)
- 1 tsp (5ml) of dried mixed herbs
- 1 tsp (5 ml) of dried, crushed chillies
- 2 tbsp (30 ml) of tomato puree
- Small tin of Red Kidney Beans in Chilli sauce
- Small tin of baked beans
- 2 tbsp (30 ml) of tomato burger relish
- 2 tsp of sugar
- One beef OXO cube
Method
Brown the mince in a small frying pan.
Chop the onion, red pepper and chillies, with one half of the onion and one half of the red pepper chopped very finely and the remaining halves chopped into bigger pieces (for a garnish, slice some strips of pepper)
Warm the oil in a saucepan, then fry the finely chopped onion and red pepper with the garlic, chillies and herbs until lightly browned and soft.
Add the browned mince, tinned tomatoes, kidney beans, baked beans, burger relish, crushed chillies, sugar, tomato puree and OXO cube, and simmer for 30 mins, stirring occasionally.
Add the remaining onion and red pepper with the chopped mushrooms, and simmer for a further 10-15 mins.
For those who prefer a milder Chilli, plain yoghurt on the side provides a creamier flavour and cools the mouth
