Frascati & Raspbery Jellies

The raspberries turn jewel red and look so beautiful suspended in the sweet jelly. The sparkling wine provides not only a sweetness but if you manage to cool it quickly enough a sublime effervescence.

 

  • Serves: 6
  • Preparation Time: 10 minutes
  • Leave to set overnight

Ingredients
200g Raspberries
¼ pint of water
¾ pint (425ml) Sparkling Frascati (or your own choice of sparkling sweet wine)
50g Caster sugar
2 Leaves of Gelatine (softened in cold water for 10 minutes)

Method
1. Place the Raspberries in half of the wine.

2. Remove the gelatine leaves from the cold water and squeeze any excess water out. Add the other half of the wine and allow to dissolve once dissolved pour in the cold wine with the raspberries..

3. Pour the Jelly into 6 serving glasses, allow to cool to room temperature and then putting them into the fridge overnight.
