Grilled Sardines with Chilli, Lemon and Lime Salsa

Ingredients
8 Sardines, gutted and boned
2 Lemons
1 Lime
1 Large red onion, chopped
1 Red chilli, deseeded and finely chopped
Small bunch fresh parsley, chopped
Small bunch fresh Coriander, chopped
100ml Extra Virgin olive oil
Juice of 1 lime
Salt and pepper
Method
1. Preheat your grill or barbeque to it hottest setting.
2. Top and tail the lemons and lime, cut away all of the skins and pith. Then cut in-between the membrane to give nice little segments of citrus. Roughly chop in to chunks and place in a serving dish.
3. Add the herbs, chilli, onion and olive oil, mix well and season to taste. (I sometimes crumble in some feta cheese too and replace the coriander with mint.)
4. Lay the fish out flesh side up and cook under the hot grill for barely 2 minutes and then turn and cook for a further 2 minutes, you may have to adjust the time for larger sardines later in the year.
5. Season the sardines and serve with the salsa and fresh crusty bread.
For a cocktail canapé sit ½ fillets of sardine on a teaspoon of the salsa, on to of a bruchetta. Try and keep it to two bite sized as it can get a little messy and inelegant if larger.
