Week 5 - w/b 3 December

The Christmas cakes we made earlier are now rich and flavourful after weeks of feeding, now it is time to decorate them. Icing Christmas cakes used to fill me with terror, they never seemed to look neat enough, but over the years I have discovered a few tricks. One of the simplest ways of decorating a cake is with dried fruit and nuts, this is also better for people who have to watch their sugar consumption.

I love making Gingerbread houses, they are so sweet. I must admit ours is purely for decoration, but you could eat it if you can bear to destroy something so pretty. The only bit I don't let the kids help with is the assembly stage as it involves molten sugar at around 200oC, so for safety sake I do this alone. The kids however love to decorate, our house is usually covered in icing, but I kind of like it that way.

If you don't fancy building a house you could always make Christmas tree decorations out of gingerbread and decorate them. A huge variety of reasonably priced cookie cutters are now widely available. If you're feeling adventurous you can even make ‘stained glass' effect cookies. A neatly wrapped box of home made cookies also makes a perfect gift.
