Brandy butter

A classic accompaniment to Mince pies or Christmas pudding. Super simple to make and easy to adjust to your own taste. I wrap my brandy butter in grease proof paper to store it in the fridge or freezer, it's space efficient and kind of looks like a Christmas cracker which makes me smile.
Serves: 6-8
Preparation Time: 10 minutes
Ingredients
125g Unsalted butter, softened
125g Icing sugar
2 tbsp Boiling water
3 tbsp Brandy
Method
1. Cream together the butter and the icing sugar.
2. Beat in the boiling water and brandy until smooth.
3. Chill until needed and serve with mince pies or Christmas pudding.
You can also freeze brandy butter if you want to make it well in advance, but to be honest it's so easy to make you don't really save any time. The best/weirdest Brandy butter item I've ever seen is a 1972 demonstration by Fanny Craddock where she dyes the butter bright green and pipes it into a Christmas tree shape, then decorates it with angelica, truly bizarre.
