Braised Red cabbage with Apples

This recipe is a great balance between sweet apples, spices and slightly tart red cabbage. A welcome change to the standard vegetables usually served with roast dinners, Braised red cabbage is perfect with pork, duck, venison and sausages.
Serves: 4
Preparation time: 20-25 minutes
Cooking time: 2 hours
Ingredients
½ Red cabbage
2 large cooking apples, peeled, cored and chopped small
1 Red onions, chopped small
1 Clove garlic, chopped very small
¼ Nutmeg, freshly grated
¼ tsp Ground cinnamon
¼ tsp Ground cloves
3 tbsp Brown sugar
3 tbsp White wine vinegar
15 g butter
Salt
Freshly milled black pepper
Method
1. Pre-heat the oven to 150°C/Gas 2.
2. To prepare the cabbage discard the tough outer leaves of the cabbage, cut it into quarters and remove the hard central stalk. Then shred the rest of the cabbage finely, you can do this in a food processor if you want.
3. Place the shredded cabbage, apples, onions, spices, garlic and sugar in a large casserole dish and mix well. Now pour in the wine vinegar, and place little pieces of butter on the top. Put the lid on the casserole dish, or cover it with foil and let it cook very slowly in the oven for 2 hours until tender, srirring occasionally.
