Brie and cranberry crostini

A great combination or soft creamy cheese and deliciously sharp and sweet cranberries. The crostini is Italian in origin, but works well with a French twist.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients
150g Cranberry sauce
Ciabatta bread, sliced
Olive oil
2 - 3 fat garlic cloves, halved
300g Brie
Method
1. Preheat the oven to 200°C/gas 6
2. Brush the Ciabatta with a little olive oil. Place on a baking sheet and bake in the oven for 10 minutes until lightly crisp and golden brown.
4. Remove the bread from the oven and quickly rub the surface with the garlic clove, then top with the sliced Brie, place a teaspoon of cranberry sauce.
You can do this with just about any cheese, you could always use quince paste instead of cranberry sauce, but I think the cranberries make it a little Christmassy. Try to get a good brie not a bland supermarket version, they're only little so it must provide a hit of flavour.
