Spicy Roast Butternut Squash

A tasty alternative to traditional roast potatoes. High in vitamins A and C and a good source of beta-carotene, magnesium, manganese, calcium and potassium Butternut squash is also a healthy alternative. Children love the sweetness with out it being too overpowering.
Spicy Roast Butternut Squash.
- Serves: 4
- Preparation time: 10 minutes
- Cooking time: 30 minutes
Ingredients
1 medium sized Butternut squash
50ml Olive oil
1 tsp Sea salt
1 tsp Freshly ground Pepper
1tsp Fennel seeds, crushed
1tsp Dried chillies, crushed
4 Cloves of Garlic whole, peeled
Method
1. Preheat oven to 180oC/Gas 4.
2. Peel the butternut squash and remove the seeds, cut into 1 inch dice. Squash are a slightly unusual shape so be careful when cutting.
3. In a small bowl mix together the oil, salt, garlic and spices.
4. In a large baking tray rub the butternut squash with the oil, garlic and spice mix. Spread out into a single layer.
5. Bake for 30 minutes until squash is tender.
Make a great accompaniment to roast pork, fish or chicken.
