Lamb Cutlets with Feta Cheese and Herb Crust.

Ingredients.
Allow 2 cutlets per person.
Feta cheese.
White breadcrumbs.
Parsley.
Oregano.
Black pepper.
Mild oilive oil.
Method.
Place a slice of cheese onto each cutlet. Mix together breadcrumbs and herbs and season with a little black pepper. Place on top of cutlets and pat down to firm. Drizzle with a little olive oil and place on a wire rack over a baking tray.
Bake in the oven at 180 degrees C (Gas Mark 4) until crisp.
