Easy Bean Casserole

Bean Casserole
- Tin of black-eyed beans
- Tin of chick peas
- Tablespoon of tomato puree
- Tin of chopped tomatoes
- Tin of sweetcorn
- 250g mushrooms
- 1 green pepper
- 1 onion
- 1 clove of garlic
- Tablespoon of chopped fresh basil
- Tablespoon of chopped fresh parsley
- 1 pint of vegetable stock
- Place the beans, chopped green pepper, chopped garlic, chopped onion , tomatoes, tomato puree and vegetable stock into a large pan.
- Bring to the boil then simmer for 1 hour stirring occasionally.
- Add the parsley, basil, chopped mushrooms and sweetcorn - mix well and simmer for a further fifteen minutes
- Serve with brown rice, hot crusty bread or a jacket potato
