Orange & Lemon Muffins

Ingredients:
1 Orange
1 Lemon
15g softened butter
9 eggs
340g caster sugar
25g plain flour
340g ground almonds
1.5tsp baking powder
- Boil the orange and lemon gently for an hour until soft. Cut in half and remove any pips and then puree them (including the skin) to a chunky puree.
- Preheat oven to Gas mark 4. Place 24 paper muffin cases in muffin tins.
- Whisk the eggs and sugar together in a large bowl to a thick consistency. Sift in the flour, then fold in the almonds and baking powder. Fold in the orange and lemon puree.
- Pour the mixture into the muffin cases. Bake them for 15-20 mins.
- Cool for 15 minutes.
- For a dessert they are lovely served with a dollop of greek yogurt and orange segments.
