Recipe - Sweet Potato and Coconut Soup

Sweet Potato & Coconut Soup
Preparation time: 15 minutes
Cooking time: 35 minutes
3 medium-sized sweet potatoes
3 medium-sized white potatoes
4 spring onions
Knob of butter
1 tbsp olive oil
2 tsp medium curry powder
1 litre vegetable stock (Marigold Bouillon is good)
200ml coconut milk
1 tsp Pataks tikka masala curry paste
Salt & pepper to taste
Peel & roughly chop all the vegetables.
Melt the butter and olive oil in a pan, lightly sweat the leeks and onions. Add the curry powder and cook for 2 minutes.
Add the potatoes and sweet potatoes and sweat for a further 3 minutes, stirring.
Add the stock, bring to the boil and simmer for 30 minutes.
Add the coconut milk, heat through then blend either in a liquidiser or with a hand-blender.
Add the curry paste and season to taste. Warm through for a further 5 minutes. Serve (you may choose to sprinkle a few toasted almonds on the top for garnish).
Delicious with naan bread cut into fingers for dipping.
